I’m Nicola Cernison, I have a Bachelor’s Degree in Business Administration, and I have been in the hospitality business for over 20 years.

I worked in several hotels in northern Italy, especially in Venice. At some point in my life, when I thought I had made it, that I had reached the peak of my career, I suddenly realized that I was not at all fulfilled with my job, that I was missing something, that I could not go on like that!

I wanted more, a “place” that was completely mine, that I could shape, but more importantly lead in a less inflexible and much more carefree way than I was forced to do while running hotels.

So, when I had the opportunity to acquire Dietro le quinte, which also happened to be my favorite seafood restaurant, I “dropped everything” and, without a second thought, took action!

Right from the start I made an important decision: not to alter for any reason the kind of traditional cuisine that has ensured the success of the restaurant. Dietro le quinte has been a destination for so many residents, as well as actors and celebrities, since the days when it was called “American Bar.”

And so I designed menus that rely on the classic and typical cuisine of our beloved Venice without giving up the innovation and creativity aspects in wich i believe.

I like to think of Dietro le quinte as a special place where you can relax after a day of hard work while savoring a fantastic seafood dish with the whole family or enjoy Venetian dishes while sipping good wine with your friends.

Obviously I can’t and won’t do it all by myself! I have fellow travelers with whom I share the same philosophy and who help and support me: my team, consisting of chefs Alessandro and Giacomo and my two dining assistants Consuelo and Carlotta.

Well, I introduced myself and told you something about my experience. I sincerely hope that you have understood that my job is my true passion. Because the truth is, no matter how much effort you put into it, only through it can you really make a difference!
